Meat - Raspberry Rosettes by Eleonora I. - Recipia
To prepare these delicious filled rosettes with jam, we start by making the dough. In a bread machine, we add the ingredients in the following order: warm water, salt, sunflower oil, white wheat flour, sugar, and dry yeast. It is essential to follow this order to achieve a uniform and well-risen dough. We activate the kneading program and let the machine work for about 10-15 minutes, until the dough becomes supple and elastic. After kneading, we cover the machine with a towel and let the dough rise at room temperature, in a warm place, for 40 minutes or until it doubles in volume.

Once the dough has risen, we prepare to shape it. We sprinkle a little flour on the work surface and grease the surface with oil to prevent sticking. We divide the dough into pieces of about 50 grams each and roll them out with a rolling pin, forming thin sheets. On each strip of rolled-out dough, we place a teaspoon of jam, choosing our favorite flavor, whether it is apricot, raspberry, or plum. It is important to leave the edge free to seal the filling well. We roll each strip of dough, ensuring that the jam remains well wrapped inside.

Once we have formed all the rosettes, we place them on a tray lined with baking paper or silicone foil. We let them rest for another 10 minutes, allowing them to rise a little. Meanwhile, we preheat the oven to 200 degrees Celsius, using the convection function, which will help with even baking. Before placing them in the oven, we brush each rosette with a little oil using a brush, to achieve a golden and crispy crust.

We bake the rosettes for 25 minutes or until they become nicely browned. After taking them out of the oven, we cover them with a damp towel and a dry one, letting them cool for 4-5 minutes. Meanwhile, we prepare a simple glaze from powdered sugar, mixed with a little syrup and water, which we will pour over the warm rosettes to give them a shiny appearance and a sweet taste. Finally, we toast the almonds in a dry pan and generously sprinkle them over the glazed rosettes. This delicacy will bring joy and flavor to any meal. Enjoy your meal!
