To prepare a delicious turkey roll, we start with the turkey thigh that we have carefully deboned, removing all the bones to obtain a uniform piece of meat. Once we have the deboned thigh, we use a meat mallet to gently pound it, being careful not to make it too thin, just enough to even it out and allow the spices to penetrate.

The next step is to take care of the flavorful marinade. We take a few cloves of garlic and crush them well until they become a fine paste. In this paste, we add sweet paprika, freshly ground pepper, and salt, then, using a spoon, we gradually pour in olive oil. We mix the ingredients until we obtain a thicker, homogeneous paste that will give an intense flavor to our roll.

After preparing the marinade, we spread this spice mixture over the entire surface of the turkey thigh, ensuring that each portion is well covered. Then, we carefully start rolling the thigh, forming a tight roll that will keep all the flavors inside. Once the roll is ready, we tie it with kitchen twine so that it does not come apart during baking.

We choose a suitable baking dish in which we will cook the roll, and then place the turkey roll inside. We pour over it 100 ml of melted and well-heated lard, which will provide a golden and crispy crust, as well as 250 ml of water to help keep the meat juicy. We cover the dish with aluminum foil to maintain moisture, and then we put the dish in a preheated oven at a medium temperature. We let the roll bake for about 1 hour.

After this interval, we remove the aluminum foil and let the roll continue baking, turning it occasionally for even browning. It is important to baste the roll with the juices from the dish to intensify the flavors and prevent the meat from drying out. The roll is ready when it becomes golden and crispy on the outside, and the juices inside are clear.

For serving, we recommend accompanying it with a side of potatoes, boiled or fried, as well as with fried onions, which will add a note of sweetness and texture. Enjoy this dish with your loved ones! Bon appétit!
