To prepare a delicious piadine recipe, we start by making the dough. In a large bowl, we add the dry ingredients, such as flour, salt, and baking powder. We mix these ingredients well to ensure they combine evenly. Once we have a homogeneous mixture, we add finely chopped ham and olives, which will give a savory taste and pleasant texture to our piadine. It is important to ensure that both the ham and olives are evenly distributed in the dough to benefit from their flavors in every bite.

After adding the wet ingredients, such as warm water, we begin to knead the dough. It is essential to knead well to activate the gluten in the flour, which will lead to a fluffy and elastic texture of the piadine. While kneading, we gradually add olive oil, preferably extra virgin, to enrich the dough's flavor and give it a smoother consistency. The oil can be added "by eye," but it is good not to overdo it, so as not to affect the proportions of the ingredients.

After kneading the dough for about 10 minutes, we will cover it with a clean towel or plastic wrap and let it rise in a warm place for about 1 hour. This step is crucial as it allows the yeast to act, resulting in a slightly puffier and airier dough, ideal for piadine.

Once the resting time has expired, we divide the dough into balls of about 100 grams each. Then, on a floured surface, we roll each ball into circular shapes about 3-4 mm thick. It is important to ensure that the piadine are evenly rolled out for even cooking.

We heat a non-stick skillet over medium heat, and as it heats up, we can start cooking the piadine. We cook them for 2-3 minutes on each side or until they become golden and slightly crispy. It is good to flip them once to ensure they cook evenly.

Once all the piadine are ready, we can serve them warm, either as is or filled with various ingredients like cheese, fresh vegetables, or sauces. Thus, we obtain a versatile dish, perfect for a snack or a quick lunch. Bon appétit!
