For those who love pretzels, this recipe is a true delicacy, featuring fluffy rolls with the distinctive flavor of pretzels. These rolls are perfect for enjoying both plain and with various fillings, making them an excellent choice for breakfast or as a snack between meals.
To start, we prepare the necessary ingredients. In a large bowl, we add the desired amount of flour, ensuring it is of the highest quality. We make a well in the center of the flour and add the fresh yeast, which has been previously dissolved in warm water along with the sugar. This mixture will activate the yeast, helping the dough rise beautifully. Next, we add the soft butter, which will give the rolls a fluffy texture and rich flavor.
We begin to knead the dough, gradually adding salt, which not only enhances the flavor but also helps develop the gluten in the flour. We continue kneading the dough until it becomes elastic and smooth. Once we achieve the right consistency, we cover the bowl with a clean towel and let the dough rise in a warm place for 30-45 minutes, or until it has doubled in size.
After the dough has risen, we divide it into portions of about 50 grams, forming balls that we place on a baking sheet lined with parchment paper. We let the balls rise for another 20-30 minutes. During this time, we bring water with salt and baking soda to a boil, an essential step to achieve that characteristic crust of pretzels.
When the water starts to boil, we carefully introduce the rolls, two at a time, allowing them to boil for 30 seconds. This process helps form a crispy crust. After removing them, we place them back on the parchment paper, where we lightly score them with a sharp knife or a special bread blade. On top, we sprinkle salt, sesame, or poppy seeds, depending on preferences.
We preheat the oven to 210 degrees Celsius and bake the rolls for about 20 minutes or until they take on a golden hue, browning beautifully. When they are ready, we take them out of the oven and let them cool slightly before enjoying them. These rolls are extremely fluffy and have a wonderful taste, reminiscent of traditional pretzels. From the mentioned quantities, you will get about 15 rolls, perfect for sharing with loved ones.
