To prepare a delicious acacia flower syrup, start by gathering fresh flowers, preferably in the early morning when their aroma is at its peak. Make sure the flowers are clean and free of insects. In a large pot, bring water to a boil, ensuring you use enough water to cover the flowers. When the water reaches a boiling point, carefully add the washed acacia flowers. It is important for the water to boil well to extract all the flavors and properties of the flowers. Let the flowers boil for 30-40 minutes, stirring occasionally to ensure all the flowers are well soaked.

After the boiling time has passed, cover the pot with a clean towel, allowing the flowers to infuse for 24 hours. This step is essential as it allows the floral aromas to develop and intensify. The next day, prepare to strain the liquid. Use a fine sieve or cheesecloth to separate the flowers from the syrup. Make sure to squeeze the flowers well to extract all the aromatic liquid.

Once you have obtained the liquid, measure it carefully. If necessary, you can boil it a bit more to concentrate it until it reaches the desired consistency. Then, add sugar, being careful to respect the desired proportions, depending on how sweet you like the syrup. Continue to boil the syrup, stirring occasionally, until it starts to thicken. This can take between 30 minutes to an hour, depending on the amount of liquid you have.

About 30 minutes before removing the syrup from the heat, add a sliced lemon. The juice and zest of the lemon will add a note of freshness to the syrup, balancing its sweetness. When the syrup is ready and the consistency is as desired, prepare the jars. Wash them well and dry them in the oven for 10 minutes to sterilize. Pour the hot syrup into the prepared jars, making sure to fill them almost to the top. Seal the jars with airtight lids and let them cool wrapped in blankets, so they stay warm and create a vacuum. This acacia flower syrup is perfect for use in lemonades, various desserts, or simply diluted with water for a refreshing drink. Enjoy the taste of summer all year round!
