To prepare this delicious recipe, we start by ensuring that all the ingredients are fresh and of high quality. The first step is to sauté the rice, mixed meat, finely chopped onion, and carrot. This process involves sautéing the ingredients in a little hot oil, stirring constantly, until the rice becomes transparent and the flavors combine harmoniously. After the rice has taken on a slightly golden hue, we add finely chopped greens, then season with salt and pepper to taste. We mix everything well so that the spices are evenly distributed. Meanwhile, we prepare the zucchini. We cut it into thin strips, making sure they are of equal size to allow for even cooking. We arrange the strips of zucchini in a cross on a work surface, and in the center of each cross, we place a spoonful of the rice and meat mixture.
After filling all the strips of zucchini, we carefully close them, forming little packets. These will retain moisture and flavors, giving them a delicious texture. In a greased baking dish, we place the packets, making sure to arrange them so they do not overlap. On top, we add the broth, which will bring an extra flavor, and enough water to gently cover them. Now it is time to place the dish in the preheated oven at 180 degrees Celsius for a period of 20-30 minutes.
Before using the zucchini, it is recommended to sprinkle it with salt and let it sit for 10 minutes to soften. After this time, we rinse it well with cold water to remove the excess salt. Once the packets are ready, we take them out of the oven and carefully place them on a plate. For an attractive appearance, we sprinkle a fine mix of lemon zest, bell pepper, green pepper, and chopped parsley on top.
