To prepare a delicious side dish of oven-roasted potatoes, start by peeling the potatoes. Choose medium or large potatoes, which you will cut into quarters or, in the case of large ones, into 6-8 pieces. This cutting will help the potatoes cook evenly and achieve a crispy texture on the outside. Place the cut potatoes in a deep pot and cover them with cold water, then add a pinch of salt to enhance the flavor. The heat should be medium, and once the water starts to boil, let them cook for about 7-8 minutes. It is important not to boil them completely, but just enough to become slightly soft, to achieve a good consistency at the end.
After boiling, drain the potatoes in a colander, being careful not to burn yourself. Once you have drained the water, place a larger plate or a cutting board on top of the colander, holding both tightly. Shake the potatoes for about 30 seconds to roughen their surface. This step is essential as it helps form a crispy crust during baking. After shaking them, sprinkle flour, rosemary, salt, and pepper over them. Gently mix so that all the ingredients are evenly distributed over the surface of the potatoes.
Now prepare the baking tray or heat-resistant dish in which you will roast the potatoes. Add 4-5 tablespoons of oil and place the tray in the preheated oven at 250 degrees Celsius for 2 minutes to heat the oil well. Carefully remove the tray from the oven and place the potatoes in the hot oil. Quickly mix them so that they are evenly coated with oil. Now, put the tray back in the oven, setting the temperature to 200 degrees, for about 10 minutes. After this interval, take the tray out again and mix them, turning the potatoes for even browning. Put them back in the oven, this time at 180 degrees, for another 10 minutes. This baking process will be repeated, ensuring you achieve a perfect texture.
Once finished, the potatoes will be golden and crispy, and their aroma will fill the entire room. Serve them warm, alongside sauces or meat dishes, and enjoy a delicious side dish that will impress any guest.
