Meat rolls with couscous side dish
Preparation method: We start by washing the tomatoes well, ensuring that we remove any impurities or pesticides from their surface. We choose ripe, juicy tomatoes to achieve an intense flavor. After washing them, we cut them in half, taking care to maintain their shape. We place these tomato halves in a baking tray, cut side up, to allow the juices to evaporate evenly during cooking.
Alongside the tomatoes, we add unpeeled garlic cloves. The unpeeled garlic will retain its intense flavors and add a deep note of savoriness to the final dish. This mixture of tomatoes and garlic will undergo a slow roasting process that will intensify the flavors and transform the simple ingredients into something truly special.
We preheat the oven to 150 degrees Celsius and place the tray with tomatoes and garlic inside. For an hour, we let the ingredients roast slowly, allowing the natural juice of the tomatoes to concentrate and become a thick, flavorful sauce. The delicious aroma that will fill our kitchen is truly unmistakable.
After 60 minutes, we will take the tray out of the oven. The tomatoes will be beautifully caramelized, and the garlic will have a soft texture and a sweet aroma, ready to be used in various dishes. It is the perfect time to let our imagination run wild!
These roasted tomatoes can be used as a base for sauces, purees, or even as a side dish for meat or fish. They can also be added to a fresh salad, alongside feta cheese and olives, or served on slices of toasted bread, with a drizzle of olive oil and fresh basil, creating a delicious appetizer.
This simple yet flavorful recipe shows us how much slow cooking at low temperatures can influence the taste of basic ingredients. Moreover, it is a perfect opportunity to enjoy seasonal tomatoes, full of vitamins and antioxidants. So, do not hesitate to experiment and adapt the recipe according to your personal preferences!
