If you want to prepare a larger quantity of French fries, the process becomes a true culinary art, and the result will be a delicious side dish, perfect for accompanying various dishes, including fish, meat, or even vegetables. We start by peeling the potatoes, choosing medium-sized potatoes that are firm and free of spots or sprouts. After peeling, wash them well under a stream of cold water to remove any traces of soil or impurities. Let them drain well to avoid splattering with oil during frying.

Cut the potatoes into thick slices of about 1 cm, then turn these slices into sticks (fries) that are 1 cm wide. It is essential that the cuts are uniform to ensure even and crispy frying. After finishing the cutting, place the potato sticks on paper towels or a clean kitchen towel. Pat them gently to remove excess water from their surface, as moisture can affect the final texture.

In a deep pot or frying pan, heat the oil to a temperature of 185 degrees Celsius, ensuring that the oil layer is about 7.5 cm deep to allow for even frying. When the oil is hot, add the potato sticks in batches, being careful not to overcrowd them, so they are in a single layer. Use a fork to disperse them to prevent sticking together. Fry the potatoes until they are golden and crispy, about 5 minutes, turning them occasionally for even browning.

Once they reach a delicious golden hue, remove them with a slotted spoon and place them on absorbent towels to eliminate excess oil. Repeat the process with the remaining potatoes, keeping in mind that it is better to fry in small batches to maintain a constant oil temperature.

Meanwhile, preheat the oven to 230 degrees Celsius, placing a rack in the upper third. After you have finished frying all the potatoes, spread them in a single layer on a baking tray. Sprinkle salt over them to taste, and place the tray in the preheated oven. Bake the potatoes for about 5 minutes until they become extremely crispy.

Serve the French fries immediately as a side dish alongside your favorite dish. These fries will add a delicious and crispy touch to the meal, being a perfect accompaniment for fish, as well as for other dishes. Experiment with various spices or herbs to customize the recipe to your taste!
