The potatoes are carefully peeled, removing the thin skin that protects them, then washed well under a stream of cold water to eliminate impurities. Once peeled, they are cut into thin slices, transforming them into sticks. This shape will help them achieve a golden and crispy crust during frying. In a deep pan, we heat the oil to a medium temperature, being careful not to make it too hot to avoid burning the potatoes.

Meanwhile, we prepare the garlic. It is carefully peeled, removing its skin. Garlic is an essential ingredient that adds an intense and aromatic flavor to our dish. Once peeled, we crush it in a mortar or finely chop it with a knife, being careful to obtain a fine paste to release all its aroma.

After the oil has reached the ideal temperature, we add the sliced potatoes to the pan, being careful not to overcrowd them too much so that they fry evenly. It is essential to turn them occasionally with a spatula to brown them on all sides. In about 10-15 minutes, the potatoes will start to take on a golden color and a crispy texture, becoming an irresistible delicacy.

When the potatoes are ready, we remove them from the pan and place them on a paper towel to absorb excess oil. While the potatoes cool slightly, we return to the garlic. We add the remaining garlic to a large bowl, where we will also add half a teaspoon of salt, a tablespoon of olive oil, and optionally, a little chopped parsley to bring extra freshness. We mix all the ingredients well until a uniform paste is formed.

Finally, we add the fried potatoes to the bowl with garlic, gently mixing to coat them with the delicious flavors. These garlic fries are served warm, making a perfect accompaniment to any main dish or a tasty snack. Enjoy your meal!
