Chicken with Prosciutto Di Parma
We start by preparing the pot in which we will boil the vegetables. Put a large pot of water and add a teaspoon of salt, which will help enhance the flavor of the vegetables. Bring the water to a boil. While the water is heating, peel your favorite vegetables, such as carrots, potatoes, zucchini, and cauliflower. Cut them into equal-sized pieces so they cook evenly. Once the water has started to boil, add the vegetables and let them boil for 10-15 minutes or until they become tender but not too soft.
Meanwhile, preheat the oven to 180 degrees Celsius (gas mark 4) so it is ready for cooking the chicken. Take the chicken breast and cut it into 8 equal parts lengthwise. Season each piece with freshly ground pepper to add flavor. In a deep skillet, heat olive oil over medium heat. Add the chicken pieces and fry them for 4 minutes on each side until golden and crispy. Once browned, remove the chicken to a plate and wrap each piece with a slice of prosciutto, making sure it covers the meat well.
Place the chicken pieces in a baking dish on a sheet of aluminum foil. Brush each piece with a thin layer of honey, which will provide a sweet taste, and squeeze a little lemon juice on top to balance the flavors. Place the dish in the oven and bake for 10-15 minutes until the chicken is fully cooked and the prosciutto becomes crispy.
Meanwhile, check the boiled vegetables. Once ready, drain them well and mash them using a blender or a potato masher. Add melted butter, a pinch of nutmeg, salt, and pepper to taste, along with cream, and mix everything until you achieve a creamy and smooth puree.
During preparation, it is recommended to take the chicken breasts out of the refrigerator at least 10 minutes before cooking them so they reach room temperature. This step ensures even cooking, and the meat will remain juicy. Also, while frying, cover the skillet with a lid; this will help retain moisture and speed up the cooking process. If you have leftover prosciutto slices, you can use them to wrap the chicken pieces again, enhancing their flavor and texture. Finally, serve the honey-glazed chicken breast alongside the vegetable puree, and the result will be a delicious and comforting dish, perfect for any occasion.
