To prepare a delicious dish with chicken drumsticks and mushrooms, start by bringing 300 ml of chicken broth to a boil. This step is essential as it will help the mushrooms release their flavors when you add them. Once the broth has started boiling, pour it into a bowl over the chopped mushrooms, allowing them to soften and absorb the broth's flavors. Set them aside for now, as they will add a deep flavor to your dish.

Next, season the chicken with salt and pepper, then fry the drumsticks in a cast iron or stainless steel skillet using olive oil. Make sure to fry them evenly on all sides for a few minutes until they become golden and crispy. After the meat is browned, remove it to a plate and let it rest.

In the same skillet, add the butter and, over low heat, sauté the finely chopped onion for about 20-25 minutes. This method will allow the onion to become soft and sweet, adding extra flavor. Once the onion has softened, add the diced carrots and celery, continuing to cook for another 5 minutes. Transfer the vegetable mixture to a pot and reduce the heat to low.

In the pot, add the fried drumsticks, crushed garlic, and flour, stirring well to combine the ingredients. Let them sauté together for 2 minutes so that the flour absorbs the flavors. Then, pour in the 400 ml of chicken broth. Adjust the amount of broth depending on how much sauce you want to achieve. Strain the mushrooms from the broth, chop them finely, and add them to the pot along with the remaining broth.

Cover the pot and let the dish simmer on low heat for 20-25 minutes or until the meat is tender and easily comes off the bone. In the last few minutes of cooking, add the freshly chopped parsley and cream, adjusting the taste with salt and pepper to preference.

Serve this dish with warm polenta or your favorite bread, and for those who love rich flavors, add a tablespoon of cream on top. This dish, with its perfect combination of flavors and textures, will turn any meal into a culinary celebration. If you don't have the little trumpet, don't worry, porcini mushrooms are an excellent alternative, bringing a distinct flavor. Enjoy every bite!
