Chicken Breast on a Bed of Vegetables
Chicken breast is a versatile ingredient, and in this recipe, we will transform the juicy strips of meat into a savory delicacy, perfect for a family dinner or a gathering with friends. First, we prepare the chicken breast, which is cut into long, thin strips. It is important to have fresh, quality meat to achieve a tasty final result. After cutting the meat, we salt it well and season it with aromatic herbs, a pinch of pepper, and a drop of sweet or smoked paprika, depending on everyone's preferences. We carefully mix all the ingredients and let the strips marinate for about 30 minutes, so the flavors penetrate well into the meat.
Meanwhile, we take care of the vegetables. We peel the red onion and cut it into julienne, while the bell pepper is sliced into sticks. The carrot and celery are grated, which will add a pleasant texture to our vegetable mix. Garlic, cut into thin slices, will bring an intense flavor, while the cleaned and sliced mushrooms will add a note of savoriness. The tomatoes, blanched for easier peeling, are diced and prepared to be added to the vegetable mix.
The well-seasoned chicken breast strips are threaded onto short bamboo skewers, transforming into appetizing kebabs. They are grilled on a hot grill with a drop of olive oil until golden and tender. In a taller pan, we heat the remaining oil and sauté the onion and bell pepper, stirring occasionally. Once the onion becomes translucent, we add the grated carrot and celery, followed by the sliced garlic and finally the mushrooms. We cover the pan with a lid and let the vegetables steam in their juices until they become tender and aromatic. Finally, we add the diced tomatoes, salt to taste, and season with pepper and aromatic herbs, and when we turn off the heat, we add finely chopped greens.
The sautéed vegetable mix is poured into a deeper baking dish, and the chicken skewers are placed on top. The bay leaves, broken in half, are firmly inserted among the skewers, adding a distinct aroma. The dish is placed in the oven for about 20 minutes, during which the chicken will absorb the flavors of the vegetables and bay leaves. In the end, the skewers are served hot, alongside a mix of vegetables, and a fresh seasonal salad will perfectly complement this delicious dish. Enjoy your meal!
Ingredients: A large boneless chicken breast (or two smaller ones), a few bamboo sticks, 2 yellow bell peppers, 2 green bell peppers, 5-6 tomatoes, a carrot, a small celery, 6-7 cloves of garlic, 4-5 red onions, 500 g of fresh Champignon mushrooms, 50 ml of olive oil, a pinch of salt, herbs de Provence, a pinch of pepper, a pinch of paprika (sweet or hot, according to preference), a few sprigs of fresh parsley, 2 bay leaves.
