Beef Tagliata with Cream Sauce
Beef is one of the most valued ingredients in traditional cuisine, and its preparation requires attention and patience to achieve a delicious and juicy meal. We start by thoroughly washing the piece of beef, ensuring that we remove any impurities. After washing the meat, we dry it with a paper towel to avoid any moisture that could hinder browning. Then, we season the meat on both sides with freshly ground pepper to give it an intense and aromatic flavor.
In a deep frying pan, we add a generous piece of butter, which will provide a special flavor and creamy texture to the meat. When the butter has melted and started to release its aroma, we place the meat in the pan, being careful not to poke it with a fork to keep it juicy. We let the meat brown on each side for about five minutes, turning it with a wooden spatula. During this browning, we drizzle the meat with olive oil, which will contribute to a crispy and delicious crust.
Once the meat is evenly browned, we prepare a sheet of aluminum foil. We place the pieces of meat on the foil, cover them well, and place them in a tray with water. This step is essential, as the steam created by the water in the tray will help the meat cook evenly and remain tender. We place the tray in the preheated oven at 220 degrees Celsius and let the meat cook for 10-12 minutes, depending on the thickness of the piece of meat. Meanwhile, we prepare the sauce that will accompany the meat. In the pan where we cooked the meat, we add finely chopped onion and whole, slightly scored garlic to release its aroma. We let it sauté lightly, adding a tablespoon of water to help cook them. After 1-2 minutes, when the onion becomes translucent, we add the remaining butter and cream, stirring constantly to obtain a creamy and homogeneous sauce. We season the sauce with salt and pepper to taste.
Once the meat has rested, we cut it into thick slices and place it on a plate. We pour the warm sauce over it, letting it drizzle over the meat, and sprinkle finely chopped fresh parsley on top for an extra touch of freshness and color. This meal, simple yet sophisticated, will surely impress anyone who enjoys it, offering both an appetizing appearance and an unforgettable taste.
