Ingredients:

*For the cocoa layers:*
- 250 g flour
- 5 eggs
- 120 g butter
- 150 g sugar
- 150 ml milk
- 3 tablespoons cocoa
- 10 g baking powder

*For the white layer:*
- 4 eggs
- 4 tablespoons water
- 8 tablespoons sugar
- 8 tablespoons flour
- 10 g baking powder

*For the cream:*
- 350 ml milk
- 4 tablespoons flour
- 2 tablespoons starch
- 250 g margarine (Rama Maestro is an excellent choice)
- 250 g sugar
- vanilla
- grated lemon peel
- lemon juice
- 100 ml syrup (can be vanilla or fruit, according to preference)

Preparation:

*Step 1: Preparing the cocoa layers*
1. Start by separating the eggs. Beat the egg whites from 5 eggs until stiff peaks form, being careful not to leave any lumps.
2. In another bowl, mix the egg yolks with the sugar and partially melted butter until you get a homogeneous mixture.
3. Add the milk and mix well.
4. In another bowl, sift the flour, cocoa, and baking powder, then gradually incorporate them into the yolk mixture.
5. Finally, add the beaten egg whites and gently fold them in from the bottom up to keep the airiness.
6. Divide the mixture in half and pour it into a baking tray lined with parchment paper. Bake the layers at 180°C for about 30 minutes. Once baked, let them cool.

*Step 2: Preparing the white layer*
1. Separate the eggs and beat the egg whites until stiff peaks form.
