No-bake raspberry cheesecake

No-bake raspberry cheesecake is a dessert with a biscuit base and two-tone ricotta cream. Fresh raspberries sit between the layers and on top, and after chilling the cream cuts into firm slices. I prefer ricotta at room temperature so it’s easy to beat. Preparation: 25 minutes. Cooking: 2 minutes. Chilling: 3 hours and 15 minutes. Total time: 3 hours and 42 minutes. Serves: 10. Approximately 440 kcal and 9 g protein per serving.
Ingredients
- 250 g plain biscuits
- 100 g butter at room temperature
- 500 ml cold water
- 6 sheets of gelatin
- 400 ml whipping cream
- 30 ml milk
- 500 g ricotta
- 2 tablespoons sugar
- 5 ml vanilla extract
- 500 g fresh raspberries (2 large cups)
Preparation
1. Crush the biscuits with the soft butter in a food processor until the crumbs hold together. Press them evenly over the bottom of a springform pan and chill for 15 minutes. 2. Soak the gelatin sheets in 500 ml cold water for 5 minutes. Whip the cream until it forms soft peaks. 3. Heat the milk for 2 minutes, until small bubbles appear around the edge, then take it off the heat. Squeeze out the gelatin sheets and dissolve them in the warm milk. 4. Pour the milk and gelatin over the ricotta. Add the sugar and vanilla extract, then beat until the sugar dissolves and the cream is smooth. 5. Fold in the whipped cream and divide the mixture into two equal portions. Beat 250 g of the raspberries into one portion until it turns pale pink. 6. Spread the pink cream over the chilled base, then add 125 g of fresh raspberries and the white cream. Decorate with the remaining 125 g of raspberries and chill for 3 hours.
Notes
A 22 cm springform pan gives the layers enough height and makes the cake easier to remove. Choose firm raspberries for the middle layer and decoration; very soft fruit gets crushed when you cut the cake. Wetter ricotta can soften the base, so leave it to drain if you see liquid separated in the container. For a gluten-free base, swap the biscuits for 250 g of certified gluten-free biscuits. Plain biscuits without filling are the right choice here. The cheesecake keeps covered in the fridge for up to 3 days. I serve it cold with black tea; the regular base contains gluten, and the cream contains dairy.
Frequently asked questions
Can gelatin sheets be replaced with powdered gelatin?
Yes. Use 10 g powdered gelatin, hydrated in 50 ml cold water, then dissolve it in the warm milk.
Can I use cottage cheese instead of ricotta?
Yes, blend it until smooth and leave it to drain for 30 minutes before beating it.
Why did the cream split?
The milk and gelatin may be too hot when they are added to the ricotta; let them cool to about 30°C before mixing.
How do I cut clean slices?
Take the cake out of the fridge 10 minutes before cutting and wipe the blade after each slice.
