Cornulețe with Turkish delight

Cornulețe with Turkish delight are Romanian crescent cookies made with a tender butter dough and fruit yogurt, and the triangles are baked until lightly golden. I set them out once they’ve cooled next to black tea and like them small, about two bites each, with a light dusting of powdered sugar and short strips of Turkish delight, so you get some in every bite without it taking over the dough. Prep: 35 minutes. Cook: 23 minutes. Total: 58 minutes. Servings: 8. About 338 kcal and 4 g protein per serving.
Ingredients
- 250 g flour
- 10 g baking powder
- 1 g salt
- 125 g fruit yogurt
- 1 tbsp lard (15 g)
- 125 g butter
- 10 ml rum essence
- 16 g vanilla sugar
- 150 g Turkish delight
- 30 g powdered sugar
Preparation
1. Heat the oven to 180°C. Melt the butter in a small saucepan over low heat, in about 3 minutes, then leave it to cool a little. 2. Mix the flour with the baking powder and salt. Add the fruit yogurt, lard, melted butter, rum essence and vanilla sugar. Knead until you have a smooth dough. 3. Roll the dough into a sheet about 3 mm thick and cut it into triangles. Cut the Turkish delight into strips, place one on each triangle and roll the dough towards the point. 4. Arrange the crescents on a baking tray lined with parchment paper and bake for 20 minutes, until lightly golden. Leave them to cool, then dust with powdered sugar.
Notes
I put them beside black tea. Firmer Turkish delight cuts cleanly; if it sticks to the blade, dust it with a little flour. Dough made with fruit yogurt can be sticky, so flour the work surface and roll it out in portions. You can replace the yogurt with 125 g plain yogurt, but the dough will be less sweet; it contains gluten and dairy. Keep them in a box in the fridge and eat within 3 days.
Frequently asked questions
Why does the dough crack when I roll it out?
Bring it back together and leave it on the work surface for 5 minutes before rolling it out again.
Can I use jam instead of Turkish delight?
Yes, put 1/2 teaspoon of thick jam on each triangle and leave about 5 mm clear around the edges.
What kind of butter works best?
Choose butter with 82% fat for dough that rolls out easily and doesn’t leave much grease on your hands.
Can I bake two trays at the same time?
Yes, on two levels; switch the trays around after 10 minutes so they brown evenly.
