Ingredients
*For the base:*
- 5 eggs
- 7 tablespoons of sugar
- 10 tablespoons of flour
- 1 packet of baking powder
- 1 vial of vanilla essence
- 2 tablespoons of oil
*For the caramelized apples:*
- 1 kg of apples (choose sweet apples like Golden or Fuji for a better taste)
- 200 g of sugar
- 300 ml of water
*For the syrup:*
- Sugar and vanilla to taste (optional)
*For the cream:*
- 200 g of Făgăraș cheese
- 200 g of sour cream
- 1 packet of instant coffee
- 150 ml of liquid cream
- 4 tablespoons of sugar
- A pinch of cinnamon
- 3 packets of whipped cream stabilizer
Step by step preparation
1. Preparing the caramelized apples
Start by caramelizing the sugar. In a pan, add 200 g of sugar and 300 ml of water, then place over medium heat, stirring constantly until the sugar dissolves. Then increase the heat and let it boil without stirring until a golden syrup forms. It is important not to let the sugar burn!
When the syrup is ready, pour it into a baking tray (25/35 cm). Peel and core the apples, then slice them thinly. Arrange the apple slices over the caramel in the tray, making sure to distribute them evenly. Place the tray in a preheated oven at 180°C and bake until the apples become soft and caramelized (about 20-25 minutes).
2. Preparing the base
Separate the eggs into two large bowls. Whip the egg whites until stiff peaks form with 7 tablespoons of sugar, until you obtain a shiny foam. In another bowl, beat the egg yolks with 2 tablespoons of oil and vanilla essence. Then add the sifted baking powder with the flour.
Gently fold the egg white foam into the yolk mixture, being careful not to deflate it. Pour the batter over the caramelized apples in the tray and bake for 25 minutes or until it passes the toothpick test (the toothpick should come out clean).
3. Preparing the cream
While the base is baking, you can prepare the cream. In a bowl, add the Făgăraș cheese, sour cream, instant coffee, liquid cream, sugar, and cinnamon. Mix at medium speed until you obtain a smooth and thick cream. Add the whipped cream stabilizer and continue mixing for a few seconds to ensure it is well incorporated.
4. Assembling the cake
Once the base has cooled, soak it with a syrup made from water, sugar, and vanilla (if desired). Invert the cake onto a platter, with the caramelized apples on top. Add the prepared cream and decorate with the caramelized apple slices you saved. Leave the cake in the refrigerator until the next day to chill well and allow the flavors to meld.
5. Serving
When you're ready to serve the cake, cut it into portions and enjoy every bite! Add a drizzle of caramel sauce or a scoop of vanilla ice cream alongside for extra flavor. It pairs perfectly with a cup of coffee or a fragrant tea.
Useful tips
- Use fresh, high-quality apples for the best results. Firmer apples caramelize better.
- Pay attention to the oven temperature; every oven is different, so adjustments may be necessary.
- Add a splash of lemon juice over the sliced apples to prevent oxidation and maintain a pleasant color.
Frequently asked questions
- Can I use other types of apples? Yes, but sweeter ones are ideal for this recipe.
- How can I make the cream less sweet? You can adjust the amount of sugar according to your preferences.
- Can I use another type of cheese? Yes, but Făgăraș cheese has a texture and flavor that pairs well with the other ingredients.
