Baked stuffed apple dessert with oat flakes, seeds, orange and apricot jam, topped with melted chocolate. The apples are filled with a mix of oats, seeds, orange and chopped chocolate, baked until soft, and come out with melted chocolate poured over them. I pick firm apples with smooth skin, so they hold their shape in the tray. Preparation: 20 minutes. Cooking: 28 minutes. Resting: 10 minutes. Total time: 58 minutes. Servings: 2. About 420 kcal and 7 g protein per serving.

Ingredients

  • 2 large apples (360 g)
  • 2 tablespoons mixed seeds
  • 3 tablespoons oat flakes
  • 1/2 orange
  • 6 chocolate cubes (30 g)
  • 2 tablespoons apple flesh
  • 1 tablespoon apricot jam
  • 1 teaspoon cinnamon
  • 30 g chocolate for the topping

Preparation

1. We wash the apples, then cut off the top cap of each one. 2. We scoop out the cores with a spoon, along with part of the flesh. We don't throw the flesh away, it goes into the filling. 3. In a bowl we put the seeds, oat flakes, half an orange cut into small cubes, the 6 finely chopped chocolate cubes, 2 tablespoons of apple flesh, 1 tablespoon of apricot jam and 1 teaspoon of cinnamon. We mix with a spoon. 4. We put 3 tablespoons of the mixture in each apple and cover with the caps. 5. We line a tray with baking paper, place the apples on it and put them in the oven preheated to 190 degrees C, for 25 minutes, until they soften. 6. We take the tray out of the oven and leave the apples for 10 minutes at room temperature. 7. We remove the caps. We melt the 30 g of chocolate for the topping in a double boiler, 3 minutes, stirring, then pour it over the apples.

Notes

Baked apples keep covered in the fridge for up to 3 days. They go well with plain Greek yogurt or with unsweetened black tea. Small apples bake faster, so check after 20 minutes. If the filling looks dry, add a tablespoon of apple flesh, not water. For a gluten-free version, use oat flakes certified gluten-free, since regular oats may contain gluten. The filling can also be made with walnuts, raisins, honey and cinnamon (contains nuts).

Frequently asked questions

What do I do if the topping chocolate hardens before I put it on the apples?

Keep it in the double boiler for another 1-2 minutes, stirring, until it becomes liquid again.

Can I use other seeds instead of the mixed seeds?

Yes, sunflower or pumpkin seeds, still 2 tablespoons, about 20 g.

Which apple variety suits best?

Ionatan or Golden, at least 150 g each.

What can I use instead of apricot jam?

Raspberry or plum jam, still 1 tablespoon. Jam with large pieces does not spread well in the filling.

Can I use milk chocolate for the topping?

Yes, it melts more easily and tastes sweeter, and the amount stays at 30 g.
