Meanwhile, soak the gelatin in cold water according to the instructions on the package. Once the gelatin has absorbed the water and swelled, place it in a bain-marie or microwave for a few seconds until it completely melts. It is essential not to boil it but to ensure it becomes liquid and smooth.

After the gelatin has melted, gradually add it to the egg and sugar mixture, constantly mixing to avoid lumps. It is recommended to let the mixture cool slightly before adding the gelatin so as not to affect its structure. Once the gelatin is well integrated, take the bowl of whipped cream out of the refrigerator and start gradually adding the egg mixture, gently folding with a spatula or wooden spoon.
