SAVOY CAKE
To prepare a delicious cake with thin layers and fine cream, follow the steps below that will transform your kitchen into a true pastry laboratory.
We start with the necessary ingredients for the layers. Take flour, eggs, oil, and a pinch of salt. Mix them well in a large bowl until you obtain a homogeneous, slightly elastic dough. Divide this dough into two equal parts and roll each part into a thin layer using a rolling pin. Make sure the layers are uniform to bake evenly. Place each layer in the prepared baking tray lined with parchment paper, and bake them in the preheated oven at 180 degrees Celsius for about 10-12 minutes or until they turn slightly golden. After baking, let them cool on a rack.
Meanwhile, you can prepare the cream. In a saucepan, add milk, three tablespoons of sugar, and three tablespoons of flour. Boil the mixture over medium heat, stirring constantly to avoid lumps. When the cream reaches the desired consistency, similar to that of thick sour cream, remove the saucepan from the heat and let it cool completely. In another bowl, beat the softened butter with the powdered sugar until it becomes a fluffy, airy mixture. Once the cream has cooled, gradually incorporate the cream into the whipped butter, gently mixing with a spatula to maintain the airiness of the composition.
Now we are ready to assemble the cake. Place the first layer of dough on a platter. Spread some of the cream evenly over the surface of the layer. Next, add a layer of ladyfingers, which you can quickly dip in the syrup made from water and rum essence. Continue with another layer of cream, then repeat the process with another row of ladyfingers and cream. Finally, place the second layer over the entire composition.
To finish, prepare the glaze. Boil water, cocoa, and sugar in a saucepan, stirring constantly. When the glaze reaches a fluid consistency, remove it from the heat and add the butter, stirring until it completely melts. Let the glaze cool slightly before pouring it over the cake, spreading it evenly.
After the glaze has hardened, cut the cake with a heated knife to obtain perfect portions. Enjoy each piece of this delicacy, which will surely be a hit at any meal!
