To create a delicious cake, we start by preparing the batter. In a large bowl, we will beat the egg whites together with a pinch of salt, using an electric mixer at high speed. It is important to gradually add a tablespoon of sugar, continuing to mix until the egg whites become a firm and shiny foam. This step is essential, as the incorporated air will make the batter fluffy and light.

In another bowl, we will mix the egg yolks with vanilla sugar, a pinch of salt, cinnamon, and the two tablespoons of oil. This mixture will add flavor and moisture to the batter. Once the ingredients are well combined, we will add this mixture over the egg white foam, being careful to gently fold with a spatula or wooden spoon, using up-and-down motions to avoid losing air from the egg whites.

Now, it is time to add the dry ingredients: ground nuts, cocoa, flour, and baking powder. We mix again carefully, ensuring there are no lumps and everything is well integrated. The final composition should be homogeneous and slightly denser than pancake batter.

We prepare a round cake pan, which we line with parchment paper to prevent sticking. We pour the obtained mixture into the pan and level it with a spatula. We place the pan in the preheated oven at 180 degrees Celsius and bake for about 25-30 minutes. We check if the cake is ready using a toothpick – if it comes out clean, we can take the cake out of the oven and let it cool on a rack.

While the cake cools, we prepare 250 ml of coffee. We add a packet of vanilla sugar and a splash of rum essence, mixing well. We let the coffee cool, and once the cake has completely cooled, we place it on a platter. It is important to carefully detach the crust on top so as not to damage the cake. We soak the cake with coffee, ensuring it is well soaked, which will add extra flavor and moisture.

To finish the cake, we prepare a cocoa glaze. This can be made from cocoa, butter, and sugar, mixed over heat until it becomes a homogeneous composition. We cool the glaze slightly and spread it evenly over the entire surface of the cake. We let the cake sit for a few minutes so that the glaze sets, and finally, we sprinkle white coconut on top for an attractive look and a subtle aroma.

The final result is a spectacular cake, easy to make, quick, and incredibly tasty, perfect for any occasion!
