To prepare a perfect cheesecake, we need a few basic ingredients. We start by preparing the crust, which will provide support and add a crunchy note. We use digestive biscuits or graham crackers, which we crush well, then mix them with melted butter. The resulting mixture is pressed evenly into a springform pan, forming a solid base. This is placed in the oven for a few minutes until it turns slightly golden, providing a delicious aroma.

Next, we take care of the filling. In a large bowl, we mix cottage cheese or cream cheese with sugar and vanilla essence, beating them together until we achieve a smooth and homogeneous mixture. We add the eggs, one at a time, mixing gently to avoid incorporating too much air. This will help achieve a fine and creamy texture. It is important not to overheat the mixture, as the cheesecake should not be too airy.

Once we have obtained the desired filling, we pour it over the pre-baked crust and level it evenly. The cheesecake is baked slowly at a moderate temperature so that it sets gradually without cracking on the surface. After baking, we let the cheesecake cool in the oven with the door slightly open to avoid thermal shock.

When the cheesecake is completely cooled, we can decorate it as we wish. In our case, we chose to adorn it with fresh fruits arranged in the shape of the American flag, to add a splash of color and a pleasant contrast of flavors. Berries such as raspberries, blueberries, and strawberries are perfect for this decoration, but any combination of fruits will add extra flavor.

Served cold, the cheesecake becomes a true star of summer, offering a refined and refreshing taste experience. Cheesecake is a classic dessert that dates back to ancient Greece. It is usually made with a crispy crust and cream cheese, which varies from country to country. In America, cream cheese (like Philadelphia) is used, in Italy ricotta is used, and in Germany, quark is used. You can choose any type of cheese you want for making this cheesecake if you find Philadelphia too expensive. Separate two eggs into whites and yolks. Mix the crushed cookies with the egg whites from the two eggs. Press the mixture into a greased springform pan, covering the bottom and 2/3 of the sides. Chill. In the mixer bowl, mix the cottage cheese, sugar, lemon zest, and vanilla at high speed. Add 5 eggs and the two yolks one at a time, mixing each time. Finally, add the whipped cream. Pour into the cooled cookie mixture in the pan. Bake in a preheated oven at 260 degrees C for 10 minutes. Reduce the oven temperature to 120 degrees C and bake until done, about 50-60 minutes. Let it cool completely. Decorate with fresh whipped cream if desired and fruits. We chose the version with blueberries and strawberries, making our cake a suitable dessert for the July 4th celebration - Independence Day. The New York style cheesecake is left in the refrigerator overnight and served the next day by removing the sides of the pan.
