To prepare this delicious cake, I started by gathering all the necessary ingredients, making sure I had everything I needed at hand. In a generous bowl, I mixed all the dry ingredients, including flour, sugar, baking powder, and a pinch of salt. This step is essential for blending the flavors and achieving a fine texture. In another bowl, I combined the wet ingredients, such as eggs, milk, and melted butter, mixing them well until I obtained a homogeneous mixture. Then, I poured the wet mixture over the dry ingredients and mixed with a spatula, being careful not to overmix to maintain the aeration of the dough.

After obtaining a uniform dough, I lined a baking tray measuring 35/25 cm with parchment paper, ensuring it covered the bottom and edges well. I poured the dough into the tray and leveled it with the back of a spoon to achieve an even surface. I preheated the oven to a moderate temperature, ideal for baking a fluffy cake. I let the cake bake for about 25-30 minutes, testing with a toothpick to check if it was well-baked. When the toothpick came out clean, I took the cake out of the oven and let it cool slightly.

For the glaze, I put all the necessary ingredients in a saucepan, including sugar, cream, and butter, and placed it over medium heat. It is important to stir continuously to avoid the formation of sugar crystals. Although the recipe indicated to boil until it reached 115 degrees Celsius, I chose to boil the mixture for 2-3 boils and, considering that I do not have a thermometer, I estimated that it was enough. After finishing the boiling, I let the glaze cool to approximately 60 degrees Celsius, which took about 10-15 minutes.

When the glaze reached the right temperature, I used a mixer to beat it for about 5 minutes. I watched it transform from a transparent white mass into a matte white fluffy glaze. With the cake still warm, I poured the glaze over it, making sure to cover it evenly. The glaze hardens quickly, so it is recommended to act promptly. Once it has completely cooled, the cake is ready to serve, offering a perfect combination of textures and flavors that will delight any dessert lover.

 Ingredients: Base: 3 cups flour, 1 1/2 cups sugar, 3 teaspoons instant coffee, 2 teaspoons baking soda, 5 tablespoons cocoa powder, a pinch of salt, vanilla and rum essence, 2 teaspoons vinegar, 1/2 cup olive oil (I think regular oil works too), 2 cups water. Glaze: 330g granulated sugar, 50g glucose (if you have it, I didn't have it and used honey instead), 70g water.
