We carefully sift together the flour, cocoa powder, baking soda, and sugar, ensuring that all ingredients are well mixed and free of lumps. This step is essential for achieving a uniform texture in the dough. Next, we cut the butter into small pieces, making sure it is cold, to create a flaky dough. We use our fingers to mix the butter with the flour mixture until the composition resembles breadcrumbs, having a grainy consistency. It is important not to let the butter melt, but rather to integrate it evenly into the flour.

Once we achieve a sandy texture, we add the egg, mixing it with a fork. This step will help bind the ingredients, but we should not obtain a soft dough. We start adding milk, half a tablespoon at a time, mixing constantly. We continue to add the milk drop by drop until the dough becomes cohesive, yet remains firm, without being sticky. Once finished, we shape the dough into a disc, wrap it in cling film, and let it chill in the refrigerator for two hours. Alternatively, we can keep it in the freezer while preparing the filling, but not longer than necessary.

In the meantime, we prepare the delicious cream. We mix all the filling ingredients, keeping in mind that its density will depend on the amount of coconut flakes added. The cream should be easily spreadable, so we ensure it is not too thick. Once the dough has cooled, we place it in a 3-liter freezer bag. Using a rolling pin, we roll the dough evenly across the entire surface of the bag, forming a rectangle about 5 mm thick.

We cut the bag on one side of the base, leaving the other side unopened, which will help us roll the dough. We spread the filling evenly over the dough, using a long-bladed knife to distribute it evenly. Once the filling is applied, we start rolling the dough using the opened bag, beginning from the long side, thus forming a thick roll of about 5-6 cm. We wrap this roll tightly in the bag and leave it in the freezer for a few hours, but ideally, we should leave it overnight.

When we are ready to bake, we take the dough out of the freezer and cut it into slices about 5 mm thick. These are baked at a low temperature in the preheated oven for about 12-15 minutes. Thus, we enjoy a delicious cookie with an intense cocoa flavor and a fine filling, perfect to be savored alongside a cup of tea or coffee. This recipe will not only delight the taste buds but also bring joy to every moment spent in the kitchen.

 Ingredients: For the dough: 250 gr wholemeal flour, 4 tablespoons of toasted sugar, 1 tbsp cocoa powder, 1/2 teaspoon baking soda, 125 gr cold butter, 1 large egg, 1-2 tablespoons milk. Filling: 200 gr cream cheese (I use Philadelphia), 3 tablespoons toasted sugar, 1 sachet vanilla sugar, 80 gr butter at room temperature, 80 gr coconut flakes, 80 gr chopped walnut kernels with a knife.
