To prepare a delicious layered cake with cream, we will start by preparing the base. The first step is to beat the egg whites with sugar, adding it gradually to achieve a light and firm foam. It is essential to use a mixer on high speed to incorporate as much air as possible. Once the egg whites are beaten, add the egg yolks one by one, continuing to mix gently. At this point, it is important to use a spatula to fold in the ingredients without destroying the air in the egg whites.

After the egg yolks are fully integrated, gradually add the mixture of flour, nuts, and baking powder. This mixture will give the layers a fluffy texture and a delicious taste. Once the composition is homogenized, pour it into the back of a greased tray with butter or oil and lined with flour. Bake the three layers in a preheated oven at 180 degrees Celsius for about 15-20 minutes or until they turn golden and easily pull away from the edges. After baking, let them cool completely.

In the meantime, let's prepare the cream. In a saucepan, whisk the egg yolks with sugar and vanilla until you get a homogeneous mixture. Add the flour and gradually the milk, stirring continuously to avoid lumps. Place the mixture over medium heat and, stirring constantly, let it boil until it thickens, being careful not to stick to the bottom of the saucepan. Once the cream becomes smooth, take it off the heat and let it cool. After it has cooled, incorporate the soft butter, mixing until it becomes creamy and homogeneous.

Now, let's take care of the caramelized sugar. Put 300 grams of sugar in a greased metal or glass tray. Let it caramelize, being careful not to burn it. After it has cooled, crush it in a mortar and set it aside.

Assemble the cake: on a plastic wrap placed in a tray, put the first layer of the base. Sprinkle half of the crushed caramelized sugar, then add some of the cream. Place the second layer, repeat the process with the sugar and cream, and finally add the third layer. Cover with the edges of the wrap and refrigerate to set.

After the cake has set, prepare the cocoa glaze. Boil all the ingredients for a few minutes until the sugar is completely dissolved. Pour the glaze over the cake and let it chill again. Finally, cut the cake into pieces and enjoy each delicious bite. This cake is perfect for any occasion, bringing a touch of joy to every celebration!
