To prepare this delicious cake, we start by ensuring we have all the necessary ingredients on hand. We will first take care of making the base. In a large bowl, we will combine the eggs with the sugar, beating them well until the mixture becomes frothy and light in color. It is important to use an electric mixer to achieve an airy texture, which will make the base fluffy. Once we have achieved a homogeneous consistency, we gradually add the sifted flour, gently mixing with a spatula to avoid losing air from the mixture.

After incorporating the flour, we also add the oil and baking powder, mixing gently. Finally, we can add the vanilla essence, which will give a special flavor to our bases. Once the mixture is ready, we pour it into a 25x35 cm baking tray, which we have lined with baking paper.

Now comes the moment to arrange the sour cherries. It is advisable to choose ripe but slightly sour cherries to perfectly contrast with the sweetness of the base. We cut the cherries in half and lightly dust them with flour to prevent them from sinking into the batter during baking. We place the cherry halves on top of the mixture in the tray, making sure to distribute them evenly.

We place the tray in a preheated oven at low heat, allowing the base to bake for about 25-30 minutes, or until it is nicely browned and passes the toothpick test. Once the base is baked, we let it cool completely in the tray.

For the cream, we follow the instructions on the pudding package, preparing it with milk to achieve a creamy consistency. After the base has cooled, we carefully spread a generous layer of cream on top.

For decoration, we can choose to sprinkle grated chocolate on top, which will add an extra flavor. We also decided to leave part of the cake plain, which we dusted with vanilla powdered sugar to satisfy all preferences.

Both the cream version and the plain one are delicious, and the slightly sour taste of the cherries gives the cake a special character, turning it into a perfect dessert for any occasion. Enjoy each slice and savor the unmistakable flavors!
