Dough for sheets: Start by rubbing the yeast with the spoonful of sugar until it completely dissolves. This is an essential step as it helps activate the yeast, giving the dough a fluffy texture. In a large bowl, add the softened butter and mix it with the powdered sugar until you achieve a homogeneous, creamy composition. Then, add the eggs one at a time, mixing well after each to ensure they are fully incorporated. The next ingredient is the sour cream, which will add moisture and a delicious taste. After incorporating the sour cream, add the activated yeast and vanilla essence, mixing again to combine the flavors. Finally, start adding the flour in batches, mixing with your hands until you obtain a tender, non-sticky dough. It is important not to over-knead to maintain the light texture of the sheets. Once the dough is ready, cover it with a towel and let it rest for 40 minutes in a warm place so the yeast can take effect.
Filling: Meanwhile, prepare the filling. Grind the walnuts finely and mix them with the sugar, obtaining a uniform composition. This will provide a rich flavor and a crunchy texture to your cake. Divide the jam into 3 bowls, ensuring that each bowl contains an equal amount for an even distribution of flavor. After the dough has rested, divide it into 4 equal portions. Make sure each portion is of similar size, as a smaller sheet may break when stretched. Line a large baking tray with parchment paper. Then, take the first portion of dough and roll it out with a rolling pin, ensuring it fits the size of the tray. Place this sheet in the tray and evenly spread jam from one bowl on it. Sprinkle the walnut and sugar mixture over the jam, creating a delicious layer. Continue this process with the other sheets, alternating between jam and the walnut mixture, finishing with the last sheet of dough on top.
Preheat the oven to the appropriate temperature and place the cake inside. Let it bake for 45-50 minutes until the top sheet becomes nicely golden. When ready, remove the cake from the oven and let it cool on a rack.
Glaze: To prepare the glaze, break the chocolate into pieces and place it in a stainless steel bowl. Add the liquid cream and place the bowl over a steam bath. Stir continuously until the chocolate completely melts and combines with the cream, resulting in a smooth, shiny glaze. Once the chocolate is melted, set the bowl aside and carefully pour the glaze over the cooled cake, ensuring it is evenly covered. After applying the glaze, let the cake sit at room temperature until the glaze cools and hardens. Then, refrigerate the cake. When it is completely cooled, cut it into portions and serve with pleasure, enjoying every bite!
