To prepare these fluffy and aromatic muffins, we will start by gathering all the necessary ingredients. In a large bowl, we will combine the dry ingredients: 250 grams of flour, 150 grams of sugar, one teaspoon of baking powder, half a teaspoon of baking soda, and a pinch of salt. These ingredients will form the base of our recipe and contribute to the final texture and taste of the muffins.

In another bowl, we will focus on the wet ingredients. We will add 2 fresh eggs, 200 milliliters of milk, and 100 milliliters of vegetable oil. It is important for the oil to be at room temperature for better incorporation. We can also add a vanilla essence to enhance the flavor. We mix these ingredients well with a whisk or a fork until the mixture becomes smooth.

Now comes the time to combine the two mixtures. Using a wooden spoon, we will pour the wet ingredients over the dry. Be careful not to overmix! It is enough to combine the ingredients until we no longer see traces of flour. This is the key to getting fluffy muffins and not dense ones.

After we have obtained a homogeneous batter, we can add the fruits. We chose nectarines, which add a natural sweetness and a pleasant aroma to the muffins. We cut the nectarines into small cubes and gently fold them into the batter, being careful not to crush them. If you prefer, you can keep a few pieces of fruit to place on top, giving them an attractive appearance.

We now prepare the muffin tray, which we will grease with a little oil or line with baking papers. We fill each cavity of the tray with batter, making sure to leave a small space at the top, as the muffins will rise during baking. We preheat the oven to 180 degrees Celsius and bake the muffins for about 20-25 minutes or until they turn golden and a toothpick inserted in the center comes out clean.

After removing them from the oven, we let the muffins cool for a few minutes in the tray, then transfer them to a rack to cool completely. These fluffy treats are perfect for a delicious breakfast or a snack between meals. Enjoy!
