Foetat Square with Sweetness
To prepare a delicious and elegant dessert, we start by rolling out the puff pastry to an even thickness of about 1 cm. Using a sharp knife or a pastry cutter, we cut out 3x3 cm squares, ensuring that we have enough portions to satisfy the cravings of everyone who will taste this delicacy. It is important to work carefully, as the puff pastry must remain cold throughout the process to maintain its slightly crispy texture.
After cutting out the squares, we brush a third of them with egg yolk, which will give a beautiful shine and a golden color when baked. We place all the puff pastry squares on a baking tray lined with parchment paper, taking care to keep space between them to avoid sticking during baking. We preheat the oven to a high temperature and bake the puff pastry for 7 minutes, then reduce the temperature to medium for another 3 minutes, until they become slightly golden and crispy. Once baked, we take them out of the oven and let them cool on a rack.
While the puff pastry cools, we prepare the filling. We carefully drain the cherries and strawberries from the jam, ensuring that we remove the excess syrup to avoid soaking the puff pastry. Once the puff pastry has completely cooled, we separate each square into two, making sure to keep the ratio of two-thirds plain and one-third brushed with yolk. This glazed part will be used as a roof for our creations.
For the filling, we use a delicious vanilla cream, which we place in a piping bag. The cream is essential to add a layer of finesse to the dessert. We use the piping bag to create dollops of cream on each plain square, leaving the glazed ones intact to use as roofs. At this point, we carefully intersperse the cherry and strawberry jam, adding a contrast of flavors and colors.
We finish building the dessert by stacking two layers of squares, and on top, we place the glazed square, thus creating an elegant presentation. To add a touch of refinement, we sprinkle vanilla powdered sugar on top. This detail not only enhances the appearance but also the taste of the dessert. We serve these wonderful creations cold, straight from the fridge, to enjoy an explosion of flavors and textures with every bite. This recipe will transform any meal into a celebration, surely impressing all our loved ones.
