To prepare the most delicious donuts, we start with an essential step: activating the yeast. We dissolve 25 grams of fresh yeast in 3 tablespoons of warm milk, adding a teaspoon of sugar and one of flour. This mixture will be left to rise for about 10-15 minutes until it becomes frothy and has a pleasant yeast smell. Meanwhile, we take care of the other ingredients: we heat the remaining milk along with 200 grams of yogurt, adding 100 grams of sugar. It is important not to boil the mixture, but just to warm it enough to dissolve the sugar. After the mixture has cooled, we add vanilla essence, a pinch of salt, the grated zest of one lemon, and the two eggs beaten with a fork.

In a large bowl, we sift 500 grams of flour to add air and achieve a fine texture. We make a well in the center of the flour and pour in the activated yeast, the milk and yogurt mixture, as well as 50 grams of melted lard. We start kneading the dough until the ingredients are fully incorporated. Finally, we add 50 milliliters of oil and continue kneading for 15-20 minutes until the dough becomes elastic and easily pulls away from the sides of the bowl. Now, we let the dough rise in a warm place, covered with a towel, until it doubles in volume, which should take about an hour.

After the dough has risen, we prepare to shape the donuts. On a floured surface, we roll out the dough into a thicker sheet, about 1-2 cm. Using a cup or a glass, we cut circles from the dough. We place the cut donuts on a tray and let them rise again for 15-20 minutes. In a deep pot or a large saucepan, we heat the oil until it is well heated. We start frying the donuts, placing them bottom-side up (the side that was on the surface) and frying them on both sides until golden and browned. After we take them out onto paper towels to drain excess oil, we can dust them with powdered sugar for an inviting and sweet appearance. The donuts are now ready to be enjoyed, warm and fluffy, perfect for a delicious snack alongside a cup of tea or coffee!
