Chocolate donuts
To prepare this delicious recipe for chocolate cream-filled donuts, start by sifting the flour into a large bowl. This step is essential, as aerating the flour will help achieve a fluffy dough. In another container, dissolve the fresh yeast with a spoonful of warm milk and add 1/2 teaspoon of sugar. Gently mix and let the yeast rise in a warm place, away from drafts, for about 10-15 minutes, or until it becomes frothy.
Meanwhile, take another bowl and dissolve the sugar and vanilla sugar in the remaining warm milk. Make sure the milk is not too hot, as excessive heat can destroy the yeast. Once the sugar is completely dissolved, add the sifted flour to the mixture, then incorporate the risen yeast, beaten eggs with a pinch of salt, sour cream, and the softened butter.
Start kneading the dough with your hands or using a mixer fitted with dough hooks. Knead well until the dough becomes elastic and smooth. Then, cover the bowl with a clean towel and let the dough rise for about 30 minutes in a warm place. This step is crucial, as the yeast will act, and the dough will double in volume.
After the dough has risen, knead it again gently to deflate it, then roll it out on a lightly floured surface until you get a sheet about 1 cm thick. Use a glass or a round cutter to cut circles from the dough. In each of these, add a tablespoon of chocolate cream, then cover with another round of dough. Make sure the edges are well sealed to prevent the cream from leaking during frying.
Once you have filled all the circles, let them rise for another 15 minutes, covered with a towel. Meanwhile, heat the oil in a deep pan over medium heat. When the oil is well heated, fry the donuts on both sides until they become golden and crispy. It is important not to overcrowd them in the pan, so they have enough space to fry evenly. Once they are ready, remove them to a paper towel to absorb the excess oil.
