To create a delicious and refreshing dessert, we start with a selection of fresh fruits that will bring a splash of color and flavor. We begin by carefully washing all the fruits, ensuring they are clean and ready to be used. An apricot, a peach, and a kiwi will be kept for decorating the cake, while the rest of the fruits will be cut into small cubes. The banana will be sliced into thin rounds, and the pineapple, which adds an exotic note, will be drained, keeping 2-3 tablespoons for later decoration.

In a separate bowl, we mix the yogurt with sugar and vanilla sugar, obtaining a creamy and fragrant composition. The gelatin will be hydrated according to the instructions on the package, and then it will be gently heated until completely dissolved. This will be added to the yogurt mixture, stirring well to achieve a homogeneous texture. The next step is to whip the cream, which will be gently folded into the yogurt mixture to maintain the airiness and freshness of the cream. Finally, the diced fruits are added, mixing gently so as not to crush them.

After preparing the cream, it is chilled for about half an hour, during which the flavors will combine and it will set slightly. Meanwhile, we prepare for assembling the cake. We take a round cake pan, ideally with removable walls, and line it with cling film. We arrange the ladyfingers upright around the sides of the pan, ensuring they are well secured. At the bottom of the pan, we also place some ladyfingers, which we lightly soak with the juice from the pineapple compote to give them a sweet and moist flavor.

Once the cream has cooled sufficiently, we carefully pour it into the pan, leveling the surface with a spatula. The cake will be placed in the refrigerator to allow the cream to set well, which will take about 2-3 hours. Once the cream has set, we carefully remove the cake onto a serving platter, removing the cling film. We place the fruits we saved on top, diced and mixed, and in the center, a little strawberry will add an attractive detail.

After the cake is assembled, we let it chill a little longer before serving. This combination of creamy yogurt and fresh fruits will delight any palate, being a perfect dessert for warm days or any special occasion. Enjoy!
