To prepare a delicious apricot ice cream, we begin by ensuring we have the freshest and most aromatic apricots. So, carefully wash the apricots under a stream of cold water, then peel them, making sure to leave no bits of skin behind, to achieve a fine and creamy puree. Once you have peeled the apricots, cut them in half and place them in a blender. This step will turn the fruit into the finest paste, preserving its natural flavor and juiciness.

In a separate bowl, mix the yogurt with two tablespoons of sugar. This mixture will add a creamy note and a pleasant sweetness to the ice cream. If you prefer a sweeter ice cream, feel free to adjust the amount of sugar added according to your personal taste. As soon as the yogurt and sugar are well homogenized, add the apricot puree to the bowl and mix with a spatula or whisk until all the ingredients are completely integrated.

At this stage, it is very important to check the taste of the mixture. If you feel that it needs a touch more sweetness or an extra flavor boost, add either more sugar or a few extra apricots, previously pureed. Mix again to ensure that the ingredients are perfectly homogenized.

After you have obtained a uniform mixture, pour the mixture into a container with a lid, making sure not to fill the container to the top, to allow the ice cream to expand as it freezes. Cover the container well to prevent ice crystals from forming and to keep the unmistakable flavor of the apricots. Then, place the container in the freezer.
