Pickled Romanian gogoșari with cauliflower

Conserve - Pickled Romanian gogoșari with cauliflower by Florica O. - Recipia

Pickled Romanian gogoșari, a meaty sweet pepper, with cauliflower bring together peppers blanched just enough to hold their shape. Carrot, celery and horseradish go into the jar between the layers, and the vegetables stay firm in a tangy liquid sweetened with sugar. I keep an eye on how thick the flesh is, because thin-walled peppers soften faster. Prep: 35 minutes. Cook: 21 minutes. Rest: 12 hours and 30 minutes. Total time: 13 hours and 26 minutes. Servings: 20. Approximately 85 kcal and 2 g protein per serving.

Ingredients

  • 4 kg gogoșari
  • 800 g cauliflower
  • 2 medium carrots (300 g)
  • 100 g horseradish
  • 20 g celery leaves
  • 2 l water
  • 500 ml vinegar
  • 4 bay leaves
  • 3 heaping tablespoons sugar
  • 1 teaspoon peppercorns
  • 4 tablespoons oil
  • 3 tablespoons salt

Preparation

1. Wash the gogoșari, remove the seeds and leave them to drain. Wash the cauliflower, break it into florets and leave it to drain; peel the carrots and slice them into rounds, cut the horseradish into strips and wash the celery leaves. 2. Put 2 l water, 500 ml vinegar, 4 bay leaves, 3 heaping tablespoons sugar, 1 teaspoon peppercorns, 4 tablespoons oil and 3 tablespoons salt in a large pot. Bring the liquid to a boil in about 10 minutes, until the sugar dissolves. 3. Blanch the gogoșari in 4 batches, for 2 minutes each once the liquid comes back to a boil. Transfer them to a bowl and leave to cool for 15 minutes. 4. Put the cauliflower florets in the same liquid and boil for 3 minutes, until they soften slightly at the edges but stay firm. Leave to cool for 15 minutes. 5. Layer the vegetables in jars, alternating gogoșari, cauliflower, carrot, celery and horseradish. Pour the boiling liquid from the pot over them until the vegetables are covered, then seal the jars tightly. 6. Wrap the jars in blankets and leave them to cool until the next day, about 12 hours. This makes 3 jars: one 5 l jar, one 2.5 l jar and one 800 g jar.

Notes

I serve them with mashed beans or cold roast meat; the texture is like the pickles served with an everyday meal, only the vegetables stay in big pieces. If you prefer a more tart liquid, you can reduce the sugar to 2 tablespoons. Choose heavy gogoșari with thick walls and no soft spots; small ones soften faster if they spend the same amount of time in the liquid. Thin carrot rounds soften before thick ones, so keep them about the same thickness. Don’t rush filling the jars while the vegetables are hot, because they crush more easily as you pack them. Keep unopened jars in a cool, dark place; once opened, refrigerate and eat within 3 days.

Frequently asked questions

Why do the gogoșari soften?

Very ripe gogoșari or ones with thin walls soften faster. For thin-walled ones, shorten the blanching time to 1 minute.

Can I replace some of the gogoșari with kapia peppers?

Yes, you can replace up to 1 kg with meaty kapia peppers. Blanch them separately, because they soften faster than gogoșari.

How thick should I cut the carrot rounds?

Cut them about 5 mm thick so they soften at the same rate and don’t disappear among the other vegetables.
