Cute kids' snacks, tomato ladybugs

Cute kids' snacks are tomatoes filled with cottage cheese and dill, turned into ladybugs. Next to them, the plate also has a butterfly and a little mouse, made from slices of pork loin, egg, mozzarella and red bell pepper. I arrange them on salad leaves right before the meal, while they are still cold. Prep: 20 minutes. Cooking: 10 minutes. Rest: 10 minutes. Total time: 40 minutes. Servings: 3. About 190 kcal and 15 g protein per serving.
Ingredients
- 3 medium tomatoes (300 g)
- 100 g cottage cheese
- 2 tablespoons sour cream
- 1 tablespoon chopped dill
- 1 egg (hard boiled)
- 3 olives
- 1 radish
- 2 slices mozzarella
- 1 red bell pepper
- 2 slices pork loin
- 3 salad leaves
- 1 pinch of salt
- 9 green onion stems
Preparation
1. Boil the egg for 10 minutes in boiling water, then leave it for 10 minutes in cold water and peel it. 2. Wash the tomatoes and dry them with an absorbent towel. With a sharp knife, make an arc-shaped cut at one end, then cut off a cap. Carefully scoop out the core with a spoon and let the tomatoes drain. 3. Blend the cottage cheese until smooth, then add the dill, sour cream and salt to taste. 4. Fill the tomatoes with the cream and put the cut cap on top, like the wings of a ladybug. For the eyes, use small pieces of olive, and make the spots on the wings from olives too. From the green onion stems, make two antennae for each ladybug. 5. For the butterfly wings, use 2 slices each of pork loin, egg, mozzarella, radish and olive. The body is a slice of red bell pepper, and the antennae are also made from green onion stems. 6. For the mouse, cut the hard boiled egg in half and make a cut at one end. Insert 2 pieces of red bell pepper into the cut as ears, put 2 pieces of olive in for eyes and add a green onion tail. 7. Place the 3 salad leaves on a plate, then put the ladybugs, the butterfly and the mouse on them.
Notes
Stuffed tomatoes keep covered in the fridge until the next day, otherwise the cream softens from their juice. Choose firm tomatoes with smooth skin, since they cut and scoop more easily, while soft ones tear at the cap. If the cottage cheese is watery, drain it in a sieve before blending so the cream stays thick. Mozzarella slices are easier to cut when cold, straight from the fridge. Dry the radish well after washing so the slices don't slide off the cream. Serve with homemade bread spread with butter.
Frequently asked questions
Can I use cherry tomatoes instead of large ones?
Yes, cherry tomatoes of 15 to 20 g are scooped out with the tip of a teaspoon, and the cap is cut smaller.
What if the tomatoes release water after I scoop them?
Scoop out more core and turn them upside down on absorbent paper, then fill them again.
Can I use something else instead of pork loin?
Thinly sliced turkey thigh works, using 2 slices as well.
Can I make the cream with telemea instead of cottage cheese?
Yes, telemea, a Romanian brined cheese, blended with 1 tablespoon of sour cream gives a saltier cream, so use less salt.
