Omletă portofel (wallet omelette) with ham and cheese

Omletă portofel (wallet omelette) is an omelette folded like a wallet, with the filling inside and soft eggs in the middle. The finely chopped ham and finely grated cheese melt into the filling, and the pan browns the omelette on both sides without drying it out. I cut it in two and put it on the plate folded side up, so the melted cheese shows. Preparation: 10 minutes. Cooking: 8 minutes. Total time: 18 minutes. Servings: 2. About 450 kcal and 36 g protein per serving.
Ingredients
- 4 eggs
- 100 g ham
- 100 g kashkaval cheese
- 1 tablespoon oil for frying
- 1/4 teaspoon fine salt
- 1/4 teaspoon ground pepper
Preparation
1. Beat the eggs in a bowl with 1/4 teaspoon fine salt and 1/4 teaspoon ground pepper. 2. Cut the ham into small pieces and grate the cheese finely. 3. Heat 1 tablespoon oil in a pan, then pour in the beaten eggs and set the heat to low. 4. Prick the omelette with a spatula in a few places, so it cooks well across the whole surface. When it has set, put the grated cheese and then the ham on one half of the omelette, and leave it for 3 minutes on low heat. 5. With the spatula, fold the other half over the one with ham and cheese, and leave the omelette for 2 more minutes on low heat. 6. When it is nicely browned on one side, flip the omelette onto the other side and cook for 3 minutes, until it browns on the second side too. 7. Serve the omelette warm, with mixed salad or with tomatoes.
Notes
The pan must be well heated before you pour in the eggs, otherwise the omelette sticks to the bottom. If it browns too fast, move the pan off the heat for a few seconds. Finely chopped ham warms up quickly, so do not leave it on the heat for long after you add it. The cheese can also be grated over the finished omelette, if you only want a hint of cheese. Without cheese, the omelette is still good with ham and eggs, but then it contains only eggs and meat, with no dairy. I serve it with a sliced tomato and a little salt on top. It keeps for up to 3 days in the fridge and warms up gently on low heat.
Frequently asked questions
Can I use bacon instead of ham?
You can, but cut it into 1 cm strips and fry it for 2 minutes in the pan before you pour in the eggs.
What do I do if the omelette tears when I fold it?
Leave the omelette on low heat until no more runny egg comes to the surface, then fold it gently with the spatula. If it still tears, seal the edge with a drop of beaten egg.
Can I use mozzarella instead of cheese?
Yes, drained mozzarella cut into thin slices melts the same way, but it releases more water, so drain it well on kitchen paper.
