To prepare a delicious homemade salami, the first step is to choose the meat. It is essential to use high-quality beef and pork, as these will directly influence the final taste of the product. Start by cutting the meat into smaller pieces, making it easier to process. Once you have prepared the meat, you can move on to slicing the boiled potatoes. Make sure they are well cooked but not overcooked, to maintain their texture.

After all the ingredients are prepared, use the meat grinder to grind the beef, pork, and boiled potatoes. Garlic, an essential ingredient for flavor, should be minced through the small grater to release its intense aroma. Once you have obtained a homogeneous mixture, add the milk and sugar. The milk will add juiciness, while the sugar will balance the flavors, giving it a special taste.

Mix everything well with your hands, ensuring that the ingredients are fully integrated. It is time to add your favorite spices, such as pepper, salt, or even paprika, according to your taste. This mixture should be left to cool, and for three days, mix the composition for half an hour each day. This process will help develop the flavors and improve the texture.

After three days, prepare the beef intestines for stuffing. Here, it is crucial not to leave air inside the membranes to avoid bacteria formation and ensure good preservation. Use a stuffing tube to introduce the mixture, making sure to secure it well. Cut suitable portions of salami according to your preferences, and tie the ends with string to keep them well-shaped.

Once you have finished preparing the pieces of salami, they will undergo the smoking process. Place them in a well-ventilated area and let them smoke for about five days. You will notice that the membrane turns brown, and the salami shrinks slightly, indicating that it is sufficiently smoked. In the end, you will obtain a flavorful and aromatic homemade salami, perfect for serving at festive meals or enjoying with loved ones.
