Spinach and Grausor (Butterwort) Soup
To prepare a delicious spinach soup with kaiser, start by cutting the kaiser into small cubes. This will add an intense flavor to your dish. In a large skillet, heat a little oil, or if the kaiser is fattier, you can skip the oil and use its fat. Add the chopped kaiser and sauté over medium heat, stirring occasionally, until it becomes golden and crispy. This process will release the delicious flavors of the meat, enriching the soup.
After a few minutes, add the diced onion. Let the onion sauté with the kaiser until it becomes translucent, stirring occasionally. This step is essential to develop the base flavors of the soup. When the onion is ready, pour enough water into the skillet to form the base of your soup.
Meanwhile, prepare the spinach and celery. Cut the spinach into larger strips, without chopping it too finely, to maintain the texture in the soup. Celery adds a distinct flavor, so make sure it is cut into appropriate pieces. When the water in the skillet starts to boil, carefully add the spinach and celery, allowing them to boil together with the kaiser and onion for about 5-7 minutes.
In the meantime, prepare the cream mixture. Take the garlic and crush it, then mix it with the egg yolks and cream. This mixture will give a special creaminess to your soup. When the spinach and celery are cooked, take a ladle of broth from the pot and gradually add it to the bowl with the cream, stirring continuously. This step is important to avoid curdling the cream, ensuring it incorporates perfectly.
After the cream has diluted well with the broth, pour the mixture back into the pot with the soup, stirring constantly. Let the soup simmer on low heat for a few minutes, so all the flavors combine. You can adjust the consistency of the soup by adding more liquid if necessary. Finally, taste and season with salt and pepper to your liking. The spinach soup with kaiser is now ready to serve, full of flavor and color, perfect for a comforting meal. Serve it hot, perhaps with some crunchy croutons or a slice of fresh bread on the side.
