Pork Bone Soup with Vegetables
To prepare a delicious and comforting pork soup, we start by preparing a 4-liter pot in which we will boil water. We add a generous tablespoon of salt, which will help enhance the flavors. Meanwhile, we take care of the pork bones, washing them well under a stream of cold water to remove impurities and any residues. Once the water has started to boil, we add the washed bones and let them simmer over medium heat for about an hour. During this time, we remember to skim the soup so that we obtain a clear and limpid liquid.
In parallel, we can focus on the vegetables. We peel the carrots, parsley, celery, and bell pepper, then wash them well and cut them into small cubes so they cook evenly. We leave the garlic clove whole, as we want its flavor to infuse subtly into the soup without becoming too strong. After an hour of boiling the bones, we add the chopped vegetables and the two bay leaves, which will add a special taste to the dish.
After about 10 minutes of boiling, we add the washed rice, stirring occasionally to prevent it from sticking to the bottom of the pot. The rice will help thicken the soup and add a pleasant texture. After another quarter of an hour, it's time to add the chopped bell pepper, tomato juice, and tablespoon of tomato paste, which will give the soup a vibrant hue and rich flavor. At this stage, it is important to taste and adjust the salt according to our personal preferences.
To add a tangy note, we can choose to cover the soup with borscht or sprinkle it with lemon juice, depending on everyone's preferences. Our soup is now almost ready, and the aroma spreading in the kitchen is simply irresistible. Finally, we serve the soup hot, adding a tablespoon of sour cream on top and, for those who prefer a spicier taste, a sliced hot pepper. This pork soup is not just a hearty meal but also a true celebration of flavors, perfect for moments spent with loved ones.
