Bacon is a wonderful ingredient that adds a special flavor to dishes. Start by cutting the bacon into cubes of about 2-3 cm. Then, in a large skillet, heat a little butter until it becomes liquid and starts to sizzle lightly. Add the bacon cubes and fry them over medium heat, stirring occasionally, until they turn golden and crispy on all sides. This will take about 8-10 minutes.

Meanwhile, prepare the vegetables. Chop the onion into small cubes, and peel and cut the carrots into cubes as well. The green onion should be sliced into thin rings to add a touch of freshness. The zucchini, which you have washed well, is cut in half and then into thin slices. After the bacon is well browned, add all the vegetables to the skillet, mixing them carefully. Also add 50 ml of white wine, which will release the flavors of the vegetables and add a note of acidity. Cover the skillet with a lid and let it sauté on low heat for 20 minutes, stirring occasionally to prevent sticking.

After the vegetables have softened, prepare the tomatoes, which you cut into small cubes. If you are using fresh tomatoes, make sure to peel them if you prefer. In another container, rinse the peas and beans, if you are using canned ones, letting them drain well. Add them to the skillet along with the tomatoes and 2.5 liters of water. Mix everything well and let it boil for 2-3 minutes, so that all the ingredients combine perfectly.

Once the water has started to boil, add the cooked rice, which will enrich the consistency of the dish. Season with basil and oregano, mixing again. This is the moment to adjust the taste, so add salt and Delikat to preference, as well as ground white pepper. A pinch of sugar will balance the acidity of the tomatoes and enhance the flavors. Let it boil for another 5 minutes to allow the flavors to blend harmoniously.

When the minestrone is ready, serve it hot, sprinkled with feta cheese or grated cheese on top for an extra flavor. This dish is not only comforting but also full of nutrients, making it ideal for a family meal. Enjoy your meal!
