Lentil Soup
A baseline for a delicious recipe inspired by Slovak traditions, this lentil dish is a true delicacy, perfect for winter evenings or any special occasion. It all starts with lentils, an essential ingredient that must be prepared the night before. Soak the lentils in cold water, making sure they are well covered. This step not only helps hydrate the beans but also makes them easier to cook the next day.
The next day, drain the lentils and place them in a large pot, adding fresh water, about 2-3 fingers above the lentils, along with salt and your favorite spices. Whether you opt for pepper, bay leaves, or other aromatic spices, they will give a special flavor to the dish. While the lentils begin to boil, peel the potatoes and cut them into small cubes. This is a perfect moment to get creative; you can use sweet potatoes or even carrots for a more colorful and nutritious variant.
Add the diced potatoes to the pot, allowing them to boil together with the lentils. Next, peel the sausages and cut them into thin slices, then add them to the soup. They will add a pleasant texture and savory taste to the dish. Let everything simmer on low heat for about an hour, stirring occasionally to prevent sticking.
Once the lentils and potatoes are cooked, prepare a roux. In a pan, heat a tablespoon of oil and add the flour. Stir constantly, being careful not to burn it, until the flour turns slightly golden. If you want a thinner soup, a heaping tablespoon of flour will be sufficient. On the other hand, for a heartier dish, add 2-3 tablespoons of flour.
Once the roux is ready, add the liquid cream, mixing well to avoid lumps. This mixture will enrich the flavor of the dish and give it a special creaminess. Pour the composition over the soup, stirring gently to combine all the ingredients.
Finally, add the milk, which will provide an extra flavor and a velvety texture. Let everything simmer together for about 10 minutes, until the flavors blend perfectly. This lentil recipe with sausages is not only nourishing but also full of memories, bringing a touch of Slovak culinary traditions to every plate. Serve with freshly chopped parsley on top and enjoy a warm and comforting meal with loved ones.
