Chicken Soup with Homemade Noodles
To prepare a delicious tripe soup, the first step is to boil the meat in a large pot, using approximately 2-3 liters of cold water, to which we add a pinch of salt. This will help to enhance the flavors of the meat and contribute to a well-seasoned soup. Once the water has started to boil, it is essential to skim the meat to remove the impurities that form on the surface. This step is important for obtaining a clear and appetizing soup.
Once we have skimmed, we can add the vegetables. The onion, finely chopped, will provide a sweet and aromatic taste, while the carrot, parsley root, and celery, diced, will add a note of freshness and color to the soup. The bell pepper, thinly sliced, will complete this vegetable mix, providing a slightly spicy flavor. We let these ingredients boil together with the meat, and when it is almost cooked, we add the tomato juice. This will enrich the soup with a pleasant acidity and an intense taste, characteristic of traditional dishes.
After letting the soup boil for about 20 minutes, it is time to add the borscht. This will give the soup a very appreciated sour note, characteristic of Romanian soup recipes. In the end, it is important to taste the soup and adjust the salt so that the flavors are perfectly balanced.
While the soup is boiling, we can prepare the noodles. These are made from a mixture of flour and a beaten egg, to which we add a pinch of salt to enhance the flavor. It is essential to knead the dough well by hand, ensuring it becomes elastic and homogeneous. Once we have obtained a consistent dough, we roll it out into a thin sheet using a rolling pin. Once rolled out, we cut the sheet into thin strips, which will become our noodles.
When the soup is almost ready, we add the noodles, letting them boil together for about 5 minutes. They will soften and absorb the rich flavors of the soups. In the end, we turn off the heat and enrich the soup with a beaten egg, mixing well to achieve a creamy consistency. Before serving, we sprinkle finely chopped greens, such as parsley or dill, which will add an extra touch of freshness and color. The soup is now ready to be enjoyed, a classic recipe that will bring joy to any family’s table.
