To prepare a delicious and flavorful chestnut soup, we start by gathering the necessary ingredients. You will need olive oil, a medium onion, a carrot, a stalk of celery, edible chestnuts, a glass of dry white wine, dried oregano, vegetable broth, cream, and optionally salt and pepper for seasoning.

In a deep pot, pour two tablespoons of olive oil and heat over medium heat. Add the finely chopped onion, grated carrot, and diced celery. Stir the ingredients and let them sauté for about 7-10 minutes, until the onion becomes translucent and slightly golden, and the carrot and celery become softer. The aroma of the caramelized onion will give a special flavor to your soup.

After the vegetables have lightly browned, add the chestnuts, which will give the soup a creamy texture and a slightly sweet taste. Let everything cook for another 4 minutes, stirring occasionally to ensure the ingredients combine well. Then, deglaze with a glass of dry white wine, adding the dried oregano as well. Allow the mixture to boil over high heat so that the wine evaporates and about half of the original liquid remains, concentrating the flavors.

Once the wine has reduced, add the vegetable broth, which will provide depth to the soup. Cover the pot with a lid left slightly ajar and reduce the heat. Let it simmer on low heat for 30 minutes, allowing all the ingredients to infuse and the flavors to develop.

After 30 minutes, remove the pot from the heat and carefully transfer the mixture to a blender. Blend everything until you achieve a smooth and creamy puree. If the soup is too thick, you can add a little water or vegetable broth to reach the desired consistency. Pour the puree back into the pot, add the cream, and gently stir, heating everything over low heat for a few minutes without letting it boil.

Chestnut soup is served immediately, making it ideal for an elegant meal or a cozy dinner. You can garnish it with crunchy croutons, fresh parsley leaves, or a few drops of olive oil for added flavor.
