Turkey meat borscht - a traditional recipe from Moldova

Borscht with pieces of meat is an emblematic dish of Moldovan cuisine, reminding us of the lavish meals at home. Today, I will present a simple yet delicious recipe using turkey meat, which adds a lighter and healthier note. The secret of this recipe lies in finely chopping the vegetables and meat, giving the borscht a unique texture and special flavor. Let's get started!

Ingredients:
- 600 g turkey breast, cut into very small pieces
- 2 carrots
- 1 large parsley root
- 1 celery
- 4 potatoes
- 1 large onion
- 1 zucchini
- 3 bell peppers (different colors for a vibrant look)
- 2 tablespoons oil
- 1 l borscht
- 3 tablespoons tomato juice (homemade puree)
- 2 eggs, lightly beaten
- Fresh lovage, for garnish

Preparation:
1. Preparing the vegetables. Start by peeling and chopping all the vegetables into very small pieces. This step is essential as the small size of the ingredients allows for even cooking and perfect flavor integration. Be careful with your fingers while chopping!

2. Sauté the vegetables and meat. In a large pot, heat the two tablespoons of oil over medium heat. Add the chopped turkey meat and let it brown slightly for about 5 minutes. Then, add the chopped vegetables (carrots, parsley, celery, onion, zucchini, and peppers) and continue to sauté everything for another 5-7 minutes, stirring occasionally.

3. Boil the borscht. After the vegetables and meat have sautéed, add 1 liter of water to the pot and let it simmer on low heat. Cover the pot with a lid and let it boil for about 25 minutes. It is important not to add the potatoes at the beginning, as they can easily break due to their small size.

4. Add the potatoes. After 25 minutes, peel and cut the potatoes into small pieces and add them to the pot. Let everything boil for another 20 minutes until the potatoes become soft.

5. Thicken the soup. Once all the ingredients are well cooked, add the 3 tablespoons of tomato juice (homemade puree). Mix well, then take a small bowl and beat the two eggs with a little borscht from the pot. Incorporate the egg mixture into the borscht, stirring vigorously to avoid lumps.

6. Finalizing and serving. Turn off the heat and add the freshly chopped lovage for extra flavor. Let the borscht rest for a few minutes before serving. The warm borscht is served with a spoonful of sour cream on top, adding a creamy and delicious note.

Serving suggestions:
For an even richer culinary experience, you can accompany the borscht with a slice of homemade, freshly baked bread. Additionally, adding hot peppers or fresh parsley on top can give a spicy and fresh note.

Vegetarian option:
If you want a vegetarian version, simply omit the turkey meat and add more vegetables, such as cauliflower or peas.
