500 g sardines
200 g breadcrumbs
half a head of garlic
3-4 sprigs of fresh parsley
olive oil, as needed

Preparation

1. Clean the sardines from scales and intestines, then rinse well under cold running water. Let them drain in a sieve or on kitchen paper to remove excess water.

2. Finely chop the garlic and parsley. They don't need to be minced very finely, but should not be in large pieces either.

3. In a large bowl, combine the breadcrumbs, garlic, parsley, and salt to taste. Mix everything together.

4. Gradually add olive oil, about one tablespoon at a time, and mix with a fork or by hand until the breadcrumbs start to look like wet sand. They should not be soaked, but also not completely dry. The amount of oil varies depending on the breadcrumbs, but usually falls between 4 and 6 tablespoons.

5. Preheat the oven to 180°C. Line a baking tray with parchment paper.
