I guarantee that no one will believe they are vegan! Plus, they are extremely filling, meaning one burger is enough to satisfy your hunger at lunch.

Ingredients:
*For the patties:*
- 200 g soy slices
- 1 large onion
- 4 large potatoes
- 4 carrots
- 1 clove of garlic
- 4 slices of bread
- Thyme, parsley, dill, sweet paprika, pepper, salt (to taste)
- 3-4 tablespoons of flour (amount depends on the consistency of the mixture)
- Breadcrumbs (for coating)
- 2 tablespoons of oil (for frying)
*For serving:*
- 16 vegan buns (I used homemade buns)
- Ketchup

- Pickles

Preparation:
1. Preparing the soy: Start by boiling the soy. Choose a large pot and add 3 liters of water. Add the soy and let it boil according to the package instructions, usually between 15-20 minutes. Make sure it is well hydrated, then drain it well.
2. Boiling the vegetables: Meanwhile, peel and cut the potatoes and carrots into large pieces. Boil them in salted water until soft, about 15-20 minutes. Once cooked, drain them and let them cool slightly.
3. Preparing the mixture: Using a meat grinder, pass the soy, boiled vegetables, diced onion, and garlic through the machine. This step is essential as it will ensure a perfect texture. If you don’t have a grinder, you can use soy cubes and grate the vegetables.
4. Adding bread and spices: Add the four slices of bread to the mixture, along with all desired spices (thyme, parsley, dill, sweet paprika, pepper, and salt). Mix everything well and, depending on the consistency of the mixture, add 3-4 tablespoons of flour. If the mixture is too soft, add 1-2 tablespoons of mineral water.
5. Forming the patties: Wet your hands with water and form round and slightly flattened patties. Coat them in breadcrumbs for a crispy crust.
6. Frying the burgers: In a pan, heat a little oil over low heat and fry the patties on both sides until golden and crispy, about 3-4 minutes on each side. It is important to fry them on low heat to cook evenly.
7. Assembling the burgers: Cut the buns in half. Spread the bottom of each bun with ketchup, add a layer of lettuce, then the vegetable patty. Continue with ketchup, slices of pickles, tomato, and rings of green onion. Put the top on, and your burger is ready to serve!
