Romanian autumn vegetable ghiveci in a multicooker

Season - Romanian autumn vegetable ghiveci in a multicooker by Gianina H. - Recipia

The potatoes soften during the 50 minutes it takes to make Romanian autumn vegetable ghiveci in a multicooker. The onion, peppers, carrot and green beans cook alongside the potatoes, while the tomatoes, added towards the end, make a thick sauce in this fasting-friendly stew with soft vegetables. I serve it with bread to mop up the sauce. Prep: 20 minutes. Cook: 55 minutes. Total time: 75 minutes. Serves: 4. About 260 kcal and 6 g protein per serving.

Ingredients

  • 45 ml olive oil
  • 2 medium onions (300 g)
  • 1 medium red bell pepper (150 g)
  • 1 medium green bell pepper (150 g)
  • 1 medium yellow bell pepper (150 g)
  • 1 medium carrot (150 g)
  • 2 medium potatoes (300 g)
  • 150 g green beans
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 240 ml water
  • 2 garlic cloves
  • 400 g canned tomatoes in tomato sauce
  • 15 g fresh parsley
  • 15 g fresh dill

Preparation

1. Peel the onion and slice it. Slice the peppers, cut the carrot into half-moons and dice the potatoes. Break the green beans into pieces, chop the garlic and chop the canned tomatoes. 2. Put the oil and onion in the multicooker pot. Select the Fry function for 5 minutes, until the onion softens. 3. Add the peppers, carrot, potatoes, green beans, salt, pepper and 240 ml water. Select the Stew function for 50 minutes. 4. 10 minutes before the end, add the garlic and chopped tomatoes. Let the program finish; the potatoes should be soft. 5. Turn off the multicooker and sprinkle over the chopped parsley and dill.

Notes

Floury potatoes fall apart more easily, so choose a waxy variety if you want the pieces to hold their shape. The onion is the step many people rush; let it soften well before adding the other vegetables. If the canned tomatoes have a lot of juice, the sauce will be thinner, like a vegetable stew. I serve it in a bowl with bread to mop up the sauce. Leftovers keep in a covered container in the fridge for up to 3 days.

Frequently asked questions

Can I use frozen green beans?

Yes, put them straight into the pot without thawing them; separate the pods before adding them.

Can I replace canned tomatoes with fresh tomatoes?

Yes, use 400 g ripe tomatoes, blanch them for 30 seconds and peel them before chopping.

How do I stop the green beans from staying tough?

Break the pods into pieces about 3 cm long; very thick ones may stay firmer than thin ones.
