Roasted beetroot hummus

Season - Roasted beetroot hummus by Ludovica B. - Recipia

Roasted beetroot hummus is made for picnics, served with fresh vegetables and pita. The beetroot roasted with rosemary loses its raw bite and leaves its colour in the chickpeas, so the paste comes out pink-violet and very smooth. I leave it a bit thick, enough to stay on the pita and not run off the bowl. Preparation: 15 minutes. Cooking: 22 minutes. Resting: 10 minutes. Total time: 47 minutes. Servings: 4. About 260 kcal and 7 g protein per serving.

Ingredients

  • 1 large beetroot (300 g)
  • 3 tablespoons olive oil
  • 1/2 teaspoon fine salt
  • 1 teaspoon dried rosemary
  • 1 can cooked chickpeas (400 g)
  • 2 garlic cloves (peeled)
  • 1 lemon (about 40 ml juice)
  • 1 teaspoon ground cumin
  • 2 tablespoons tahini
  • 1/2 teaspoon ground black pepper

Preparation

1. We wash the beetroot, peel it and cut it into smaller cubes. 2. Grease a tray with 2 tablespoons of olive oil, spread the beetroot cubes on it and sprinkle with 1/4 teaspoon of fine salt and 1 teaspoon of dried rosemary. Put the tray in the oven for 20 minutes, until they soften when pierced with a fork. 3. Take the beetroot out of the oven and let it cool for about 10 minutes. 4. Open the can of chickpeas, drain it well and rinse the chickpeas with cold water. 5. Remove the rosemary pieces from the beetroot before mixing. Put the well drained chickpeas in a bowl, add the roasted beetroot, 1/4 teaspoon of fine salt, 1/2 teaspoon of ground black pepper, the juice of one lemon, 1 teaspoon of ground cumin, 2 peeled garlic cloves, 2 tablespoons of tahini and 1 tablespoon of olive oil. 6. Blend with a hand blender for 2 minutes, until the mixture is creamy. 7. Serve with fresh vegetables and pita.

Notes

The hummus contains sesame through the tahini, so it is not suitable for people allergic to sesame, but it has no dairy or eggs. The paste itself is gluten free, but the pita is not. Dried rosemary can be replaced with 1 teaspoon of dried thyme. Boiled beetroot can take the place of the roasted one, but the paste is less sweet. Keep the hummus in the fridge for up to 3 days, in a container with a lid, and take it out 10 minutes before serving. If the beetroot is large, the cubes may need a few extra minutes in the oven, until they soften when pierced with a fork. If the paste turns out too thick, add a tablespoon of warm water while blending. Sliced bell peppers are good on the side.

Frequently asked questions

Can I use dried chickpeas instead of canned?

Yes. For a 400 g can you need about 120 g of dried chickpeas, soaked overnight and cooked until very soft.

What if the hummus turns out grainy?

Blend for another 30 seconds with the blender running and stop when you no longer feel lumps.

How do I make hummus without tahini?

Use 2 more tablespoons of olive oil and 3 tablespoons of warm water instead, then blend until smooth.
