To prepare a delicious vegetable soup, we start by preparing the ingredients. The first step is to take the zucchini, which we wash well under a stream of cold water. After peeling the zucchini, we cut them into small cubes. We continue with the root vegetables, such as carrots and parsley, which we peel and cut into small cubes to cook evenly. The onion, an essential ingredient in any soup, is finely chopped, and the bell pepper is sliced into thin strips to add a pleasant texture.

Once we finish cutting the vegetables, we put all the ingredients, except for the zucchini, into a pot of boiling water. We let the vegetables boil for about 15 minutes to soften and reveal their flavors. In the meantime, we take care of the tomatoes. We blanch them for a minute in boiling water to easily remove the skin. After peeling them, we cut them into cubes and add them to the pot along with a little water, allowing them to simmer on low heat.

At this stage, we focus on the borscht, which we prepare separately. It can be homemade borscht, full of flavor, or we can opt for a Knorr borscht cube or the Secret of Taste borscht, which will give the soup a pleasant sour taste. When the vegetables in the pot have boiled well, we add the borscht and let everything simmer together for another 5 minutes to allow the flavors to blend harmoniously.

Finally, it is important to adjust the taste of the soup. We add salt and pepper to taste, and to complete the dish, we add freshly chopped dill. The dill will bring a touch of freshness and enhance the flavors of the vegetables. Our soup is now ready, and its aroma will fill the entire kitchen, inviting us to sit at the table. It can be served hot, alongside a slice of fresh bread or with a spoonful of sour cream for an even richer taste. Enjoy your meal!
